His cuisine is Mediterraneanwhere he finds with the help of fishermen from Marseille, fishes that are often forgotten like the tub gurnardthe wrasse or the comber.
These fishes, fished all around Marseille, come from different areas deep underwater. In many of his dishes, the fish succeed to crustaceans and is conceived in a broth or a carcass emulsionwithout adding fat. His desserts are made to impress as much in the visual than in the taste.

His father, Jean-Paul, took over Le Petit Nice in and still runs the room hotel, which is part of the establishment. Jean-Paul gained a Michelin star in and a second in In he won the third Michelin star. We returned to stay and for dinner on September 12, We were seated at a table by the window with a view along the corniche towards the calanques.
We could watch the sunset effect and the big ferries coming out of the port towards Algiers, Tunis and Corsica. I started with the cocktail maison, Champagne flavored with red fruit and basil.
It was somewhat more substantial and interesting than our normal Champagne aperitif, which Linda had this evening. Then we had very good, little tomato and anchovy pizzas to be eaten messily by hand. I was apparently too occupied to take a photo. This has been a favorite of mine and was excellent. There may have been variations from the printed menu for whatever the chef found in the market. There are undoubtedly errors and omissions, but they will not affect your overall understanding of the cuisine.
Then a little bowl of smoked sargo in a fish and vegetable broth was served. This course was delicate and a good starter.
Chunks of raw bonito were dressed with a mild lemon sauce. In the middle were finely julienned vegetables.

Very good. La langouste. The server said langoustine, but it seemed too big for that. But it had the softness of langoustine rather than langouste; anyway it was delicious.
It was dressed with carrot slices and little carrot gnocchi all in a rich shellfish broth. Alongside was a slice of celeriac root in a green broth with just fried greens.
The chunk of steamed Mediterranean sea bass was topped with zucchini and cucumber stripes and a truffle slice. In the back is an eggplant and vanilla cake. Les rougets de roche. They were on top of zucchini stripes, which seem to be sort of a signature here. Alongside were two crisp rouget pieces in a thick fish reduction. Le chapon entier. Their diet of smaller fish and crustaceans gives them a good flavor of the sea. This was served in a meat sauce, which added to its substance.
Some were cooked into the light fritter, which we were told to eat first while it was still hot. Some were in the green, chlorophyll-laden mousse of watercress, arugula and lettuce. It was garnished with a couple of mussels, a spoonful of caviar and a bit of milk foam for visual effect, the only use of a dairy product before the cheese and dessert. Le homard bleu The Breton blue lobster was the first and only exception to the Mediterranean origin of the fish. It was served on a tomato sauce that was a bit too peppery for our taste.

This was certainly memorable! We ordered the 5 course tasting menu on Saturday lunchevery dish from the squid ink soup infused with a fish teabag was sublime. The flavours The dining room is light and airy, a blank canvas for the food to take centre stage as well as the breathtaking view of The Med! The atmosphere was relaxed, informal, so different from a British 3 star establishment. Our special thanks to Fabian,an outstanding staff member who we enjoyed chatting to whilst he served us.

We decided to pre order the Bouillabaisse menu and were not disappointed. This is truly 3 star Michelin cooking at its best. We were overwhelmed by the service, the delicious food and the setting. A night to remember for us. The hotel is charming quite small but beautiful. But service was not at the level of the price and the 3 stars restaurant expectations. Lack of waitress and waitersnobody at the reception - we needed to look to fond someone.
For the restaurant waitress from the bistrot didn't know anything and gave us hazardous answers about the menus and or questions. Good but some improvements in terms of services need to be done.

We would be grateful if you could give us more details about it. We had lunch at Le Petit Nice and it was frankly totally worthy of its 3 Michelin macarons. We decided to go for the Menu des ans which is a smaller menu served at lunch at a reasonable price. All I can say is thatGerald Passedat knows how to cook fish and to surprise the palate. Every mouthful was superb and the wines that were paired with the meal were outstanding and we learnt a great deal about some different wines we didn't know.
This was a leisurely lunch where we did not feel stuffed at the end and felt it was excellent value for money. I would love to try the Corolle de Saint Pierre on my next visit.
